Today, a day and age where a plethora of ingredients are readily available, where we can conveniently order what our taste buds are calling for with opulent laziness. A day and age where we are so quick to throw away food that might not look it's best without thinking of the negative environmental repercussions implicated. When we waste food, we also waste all the energy and water it takes to grow, harvest, transport, and package it. Food. For. Thought.
From Northern Italy all the way to Southern Italy, I hope to take you on an educational food journey by encouraging you to experiment in the kitchen with ingredients you have on hand, by using your veggies from root to shoot and ultimately by wasting less.
